Zucchini noodles are the most awesome thing. They’re the perfect pasta replacement – low carb, quick, easy, healthy and delicious.
This is such a simple but delightful meal. It’s great for a quick lunch or dinner, and although it doesn’t look like much, the fats from the oil in the pesto and feta make it really filling and satisfying.
(Makes 2 serves)
1 cup cherry tomatoes, cut into chunks
1/4 cup crumbed feta
1 tbsp pesto
1. Use a julienne peeler (or regular vegetable peeler) to slice the zucchinis into noodles. Microwave for 2-3 minutes until soft. Drain any excess water.
2. Sprinkle some salt over the tomatoes to bring out their flavour.
3. Combine the zoodles with the pesto, tomato, feta and a lug of olive oil. Stir it all together and serve.
If you want to step it up a notch and make fresh pesto all you need is a few handfuls of fresh basil leaves, 1/4 cup of lightly toasted pine nuts, 1/4 cup parmesan cheese, a clove of garlic and some olive oil. Whiz the basil, pine nuts and garlic up in a food processor. Stir in the parmesan and enough olive oil to make it saucy. Done!
